Oh you mean like the ending,so kun kind a of refers to young guys,as for chan it's used for more people,like lady's,babies,elder people, but Sanji says it as chwan, as for san it refers for everything "Mr,Ms" any of those could use it

San - used as a formal way of saying someones name
Chan - used to refer to someone younger than oneself or very close friends
Sama - Master (Luffy sama - Master Luffy)
Dono - Mr.
Senpai - someone senior
Well I don't know why they use it in Japan

san--older than you
chan/swann/chwan--someone you like
chin--camie for shp
sama--mr or mrs
dono--young sir/lady
senpai--senior
sensei--teacher/doctor
