We are potato lovers here, and crispy is the best way!

We’ve been loving on these Air Fryer Potatoes, Air Fryer Tater Tots, and Air Fryer French Fries for a long time now, and it’s time to add these fun Air Fryer Potato Wedges to our list of favorites!

Before we had an air fryer, we would bake our potatoes (and we have big love for these Roasted Potatoes and Carrots!), and they are delicious but they take a bit longer and aren’t quite as crisp.

The air fryer is our favorite way to get food that is perfectly golden and crispy on the outside, without drying out the inside. And these Air Fryer Potato Wedges are perfection!

Simply seasoned, they are great paired with any dipping sauce, as an appetizer or as a side dish.

Air Fryer Potato Wedges ingredients and substitutions:

  • russet potatoes: russet potatoes are the most common potato for baking and work great for air frying as well. They are fluffy on the inside and the outside gets super crispy! You can use any other kind of potato for this recipe, but you may have to adjust the cook time slightly.
  • canola oil: canola oil has a neutral flavor and high smoke point which makes it the perfect oil for air frying. Aerosol non stick sprays are not recommended for the air fryer, and tossing the potatoes in oil before seasoning is a great way to get an even coat.
  • seasoning salt: seasoning salt is kind of a one shot wonder around here. It includes many different spices and seasonings that we would normally combine to season potato wedges, so if you’ve got it, use it! If you don’t have seasoning salt, see my alternate suggestions below.
  • garlic powder: most seasonings salts include garlic powder but I like to add a little bit extra!

How to cut potatoes into wedges:

  1. Cut each potato into half the long way
  2. Cut each half into half again to make quarters
  3. Cut each quarter into 3-4 wedges, which will equal 12-16 potato wedges per potato, or 24-32 potato wedges for the recipe below

Different seasoning options for potato wedges:

There are so many different ways to season potato wedges, since they are neutral and can take on any flavors.
Here are a few options:

  • No seasoning salt? Mix up a combination of salt, pepper, paprika, garlic powder, onion powder and cayenne to make your own.
  • Use any pre-mixed seasoning blend you like! The options are endless
  • Skip the seasoning salt and opt for garlic powder, salt and pepper. When the wedges come out, sprinkle them with freshly grated Parmesan cheese

Should I peel my potatoes when making potato wedges?

You don’t have to, but you can.

I prefer not to peek my potatoes because that skin gets so perfectly crispy in the air fryer!

If your potatoes are not very fresh and are a little on the wrinkly side, you can peel them.

Do I have to soak my potatoes before air frying?

Yes, and no.

Soaking the cut potatoes in cold water before air frying removes the excess starch on the outside of the potato and makes them super, extra crispy.

You can skip this step if your family needs dinner like now. But keep in mind that you will have better results if you take the extra 30 minutes!

Ingredients

  • 2 russet potatoes
  • 1 tablespoon canola oil
  • 1 ½ teaspoons seasoning salt
  • ¼ teaspoon garlic powder

US CustomaryMetric

Instructions

  • Wash potatoes well and cut into wedges (see post above for step by step photos).

  • Place potato wedges in a large bowl and fill with very cold water. Let sit for at least 30 minutes. If you want to leave them longer, simply place the bowl in the fridge and let soak for several hours.

  • Drain potato wedges and dry well on a clean kitchen towel.

  • Preheat air fryer to 400 degrees F according to manufacturer's instructions.

  • Place potato wedges in dry bowl, drizzle with oil and sprinkle with seasoning salt and garlic powder. Toss to coat.

  • Place potatoes in air fryer basket and cook for 15-20 minutes, opening to stir and flip potatoes once or twice through the cook time. *NOTE: a single layer is best but not necessary. If you only have a single layer of potatoes, they may cook more quickly so keep an eye on them. The more full your basket is, the longer it will take to cook. Be gentle when you stir and don't do it too often as the wedges can break and crumble.

  • Cook to desired crispiness and serve.

Why are my air fryer wedges not crispy? ›

The biggest culprit for soggy or non-crispy potato wedges is overcrowding the air fryer basket. Like with any air fryer recipe, ALWAYS cook the vegetable in a single layer.

Why are my potato wedges soggy? ›

One of my biggest tips to crispy delicious potatoes is to try to get all the excess liquid out of the potatoes before seasoning them. This will ensure the potatoes cook nice and even. If you skip this step, you are likely to end up with soggy potatoes. It's the same thing with making fries in the oven.

Do you keep skin on potato wedges? ›

Whatever you do, don't peel them! The potato skins help them become really crisp in the oven. Next, season the potato wedges. Place them in a large bowl with the garlic powder, onion powder, paprika, and salt.

How long to heat up wedges in air fryer? ›

What types of fries can you reheat in an air fryer?
  1. shoestring or very thin fries: 3-4 minutes.
  2. thin to normal cut french fries: 4-5 minutes.

Why soak potatoes in water before air frying? ›

Soaking the potatoes does something magical with the starches—it helps achieve the coveted French fry crispiness and prevents the fries from sticking together. This is what I did for the air fryer, too. I soaked these potatoes for about an hour or so, but I've also soaked them for up to 24 hours with no ill effect.

Why are my wedges not crispy? ›

Wedges should be about 1/2″ thick. If they are cut too thick, they won't crisp up properly. Soak potatoes: Place potatoes in a bowl of cold water with about 2 cups of ice cubes. Let them stand for 30 min then pat dry thoroughly with paper towels or a tea towel.

Why didn't my fries get crispy in the air fryer? ›

It's essential that you spread the potatoes in a single layer in the air fryer basket and that you leave a little space between each one. If they're too crowded, the potatoes will steam inside the air fryer, and they won't get crispy. In order to give them adequate space, you'll likely need to work in batches.

How to stop wedges from going soggy? ›

Here's the secret to making ultra crispy potato wedges: Soak your raw potato wedges in hot water for 10 minutes before baking. This step releases some of the starch in the potatoes and lets them absorb moisture, which leads to crisp outsides and moist interiors.

How do you know when wedges are done? ›

In an oven preheated to 425 degrees F, the potato wedges should be perfectly cooked in about 25 minutes. You'll know they're ready when they are easily pierced with a fork.

Should you wet potatoes before peeling? ›

According to the Centers for Disease Control and Prevention (CDC), at a minimum, potatoes should be rinsed under running water before cutting. This is crucial, even if you plan on peeling them, because germs on the outer skin can infiltrate the inside of your spuds when you cut them.

Should you peel potatoes hot or cold? ›

Transfer cooked potatoes to a colander to drain off water. Rinse with cold water immediately after draining and submerge in a cold bath. This will ensure they're cool enough to handle.

Can you put tin foil in an air fryer? ›

Foil is safe to use in an air fryer so long as you follow three basic rules: never let foil touch the heating element; make sure the foil is weighted so it doesn't blow around the basket; and avoid contact with acidic ingredients, which can cause the foil to leach onto your food.

How many minutes do you put in the air fryer? ›

5. SELECT AIR FRYER COOKING TIME
PROTEINTEMPERATURETIME
CHICKEN WINGS425°F18 to 20 Minutes
WHOLE CHICKEN360°F60 Minutes
FISH FILLETS450°F12 to 14 Minutes

Do you have to preheat an air fryer? ›

This means that when you add the food it will start to cook right away and "remove moisture from your food's surface to give it that golden-brown, crispy finish." Preheating isn't strictly necessary for air frying, and some models don't call for preheating at all.

Why are my potatoes not crispy in the air fryer? ›

Recipe Tips

Leave the skin on. If you peel your potatoes, they won't be nearly as crispy—the oiled skin gives the delicious crispy bite with these taters. Preheat your air fryer. Placing your potatoes in a preheated 400° air fryer will also help them achieve maximum crispiness in a shorter amount of time.

Why doesn t my air fryer make things crispy? ›

Dry the outside of the food properly before you add oil. Do not use too much oil, as this will make the food less crispy and more fattening. Meat or poultry can be lightly brushed with oil or marinated to get the crispiest results.

Why are my air fryer potato chips not crispy? ›

To ensure your chips are crispy, be sure to completely dry your potatoes before you start cooking. Also, make sure you rinse them long enough for crispy air fryer potato chips.
